Makes enough for 10 guests

Ingredients for the Clementine Cordial (makes 750ml)

300ml recently pressed clementine juice
200ml fresh lemon juice
500g fine sugar

To make the Cocktail (makes 850ml, serving 10)

400ml premium vodka
100ml dry gin
150ml peach liqueur
200ml clementine cordial (from the recipe above)
Whole cranberries, to garnish
Mandarin essential oil, to finish

Instructions

For the Citrus Syrup: Put all the components inside a pan, heat until it reaches a gentle boil, stirring to dissolve. Then, take off the stove and leave to cool completely. Pour to a sterilised bottle, seal keeping it in the fridge, where it will keep for up to four weeks.

To make Cocktail Base: Mix the specified liquids into one sizeable container, let it rest for an hour, then pass it through preferably using cheesecloth, to ensure it's completely strained.

To serve: Pour 85ml of your premix into your mixing glass packed with ice, and agitate carefully for one minute to chill. Strain into a chilled martini glass or a similar vessel, top with the cranberries and finish with a quick spritz of the essential oil over the top.
